We have 100 olive trees on Isola delle Rose, and after our autumn harvest we produce our own olive oil, the only one produced in Venice, and served exclusively in our dining rooms. Every Thursday afternoon we invite guests to tastings at Dispensa.
On Monday and Friday evenings our Sommelier invites guests to join them for a wine tasting. Meeting at Dispensa, Simone will select six wines to discuss the characteristics and history of the vineyard.
Our organic vegetable gardens are bursting with ripening produce that goes from soil straight to our kitchen. In these fertile pastures Chef Fabio Trabocchi gathers many of his vegetable ingredients for Fiola at Dopolavoro Venezia’s menu.
